Old Fashioned Creamy Cole Slaw

Today, I wanted to share with you all the most fabulous recipe for a side dish that is perfect for the upcoming 4th of July holiday. It is simple and delicious and pairs beautifully with my Oven Baked Brisket which you can find the recipe for on my blog.

Old Fashioned Creamy Cole Slaw

You will need:

1 bag cole slaw
1 1/4 cup mayonnaise
1/3 cup sugar
1/4 Heinz Gourmet Salad Vinegar
1/4 tsp. celery salt
1/2 tsp. seasoning salt
1/4 tsp. ground black pepper
1/4 tsp. sea salt

Put it all together:

Mix together mayonnaise, sugar, vinegar, celery salt,
 seasoning salt, black pepper, and sea salt.

Pour the cole slaw dressing over the cole slaw
and let it set anywhere from 1hr to overnight.

A late Friday Coffee Post

I'm a little late today with letting you know what's up in the life of Faith! I have taken a last minute trip to Minnesota to visit my family maybe for the last time before we have the baby. It worked out perfectly because my best friend was driving here for the weekend, so I just hitched a ride! The 12 hour trip went by pretty quickly and I have had a great day here so far. (I would argue that I maybe left because I saw the 100 degree weather Indiana was going to have;)

I am also very happy because I finally got the cheese curds I've been craving for SO long! I'm tellin' that I'm pregnant, if I get a food on my mind, I can't forget about it!

These will definitely help me gain the 5 pounds my doctor has asked of me;)

Easy Peach Cobbler

I am loving summer peaches this year! I found a great little farmers market stand about 5 minutes from my house with all the fresh peaches I could ever want. 
Keep in mind, fresh peaches from locally grown orchards are always better than what you can buy at your local grocery store. 

Easy Peach Cobbler

1/4 cup of unsalted butter
1/4 cup of flour
1 cup of sugar
1 1/2 tsp baking powder
pinch of salt
1/2 cup milk
2 cups of peach slices
1 1/2 tsp lemon juice

Melt the butter in a 10x10 square baking dish.
Combine the flour, half of the sugar, baking powder, and salt. 
Add milk and stir.
Pour the batter over butter, but don't stir.

At this point, your dish should look something like this:

Slice the peaches into desired size and mix with the remaining sugar add lemon juice.
Bring to a boil, stirring constantly. 

 Pour the peaches into the batter, dispersing evenly.
 Bake at 375 for 25 minutes or until golden brown.
 Cut into pieces and serve with vanilla ice cream for a perfect summer treat!

Mommy Mondays...Hello Second Trimester!

The word still sounds foreign when I use it to describe myself. It's such a big word...with so much meaning behind it. 
I love it.
A lot of you said you are excited for more baby posts. I will do my best to write a weekly update just for you:)

I know you can't see much yet, but here's me at 14 weeks...helloo second trimester! I've been waiting patiently for you because they tell me you bring much less puking. Please don't let me down! 

I am so looking forward to finding out if my baby is a boy or a girl. It will make it all seem so much more real. I can start picking out clothes, furniture, and names! Yayy I can't wait!

What have been my favorite things so far about my pregnancy? Knowing that there is a life inside of me. An actual baby! It's a crazy and absolutely amazing feeling. Oh and getting to hear my baby's heartbeat was the best!

What has been my least favorite thing? Puking. I hate feeling sick and nauseous!

What am I craving? Sour dough bread hands down. Toasted. With butter. I love it!

What foods make me sick? Just thinking about food can make me feel sick sometimes. 
Stuff with mayo in it...yuuuck. 
Broccoli...used to love I hate it! 
Funny how that works huh?

Other random things about my first trimester:
I get dizzy every time I stand up...every time!
I wake up with a cramp in my left leg every morning without fail. Why just my left leg?lol
I randomly hiccup with unbelievably violent hiccups!
My stomach comes alive at night...I can't even describe the noises.

One of my friends who is also pregnant said it perfectly when she said,

Being pregnant can mean a day filled with twice as much effort and half as much outcome.

But hey, I'm glad that my energy is going toward the baby and keeping it healthy and growing! That's how God perfectly planned it to be, and it's amazing.

How I told my husband "I'm pregnant!"

I'm pregnant!
I still like saying those two little words that have such big life-changing meaning behind them...literally life changing already!
The first person I said those words to were, of course, my totally unprepared husband who had no clue what was about to happen. Lucky guy;)

Well, it just so happens that I really did not think that I was pregnant. We weren't trying to have a baby yet, so even when I was 5 days late, I dismissed it as nothing. 
Sure, I felt a little over tired...and things hurt that shouldn't be hurting, but I still really didn't think I was pregnant!

Fortunately for me, I have a lovely friend, who is also the pastor's wife at our church, and she knows me pretty well...better than I do in this case! When she saw me at church on Wednesday night, she told me to take a pregnancy test because she thought I was pregnant. 

I laughed at her.

But the next morning at 6AM I decided, eh why not just pee on the stick and see! I grabbed the dollar store test from my medicine cabinet and nonchalantly went through that whole wonderful peeing-on-a-stick routine! I set the test on our bathroom sink and figured it would be a while before anything happened anyways.

I was wrong. Before I could even take my next breath...two pink lines began to emerge. TWO PINK LINES! Everyone knows what that means!

I wanted to freak out, start screaming and jumping up and down, but my unsuspecting hubby was sound asleep in the next room. 
I wanted so badly to wake him up...but if there's one thing you should know about my husband, it's that he doesn't wake up very easily. In fact, he often doesn't remember being woken up!
Since I didn't want to tell him while he was half asleep, I settled for a mini dance in front of the mirror as I muffle screamed "I'm pregnant"!
I went ahead to work with the biggest secret I've ever had to keep! 

I had the whole day to plot my announcement:)

I decided to tell him by printing off a picture of my pregnancy test and framing it with baby stickers. The twist was, I covered the test with acronym scrabble letters. 
For those of you who read our proposal story, you know that Jimmy proposed to me in an acronym, so this was only fitting. 

I had this sitting on the bed when he came home from work!
 Poor guy, he didn't stand a chance in figuring this one out. 

I love you. You Are An Amazing Hubby And Now The World's Best Dad Because We Are Going To Have A...

and then when he dumped the letters off of the frame...voila!

I laugh out loud every time I think about the expression on his face! He was excited, shocked, scared, happy, and overwhelmed all in one expression. It was priceless.
Here are some of the expressions he used...

Are you serious?
Are you sure?
Holy Crap!
Oh my goodness!
You're sure?
No way!
I can't believe it!

We hugged each other and then just sat there as Jimmy let it all sink in. He immediately began to talk about mini vans, strollers and buying a house haha.
But we have plenty of time for that! Right?
185 days...give or take a few! But who's counting;)

How do you seek God?

My hubby and I like to make a habit of praying together before we go to sleep. We started our marriage with a foundation on Christ and prayer. Maintaining that isn't always as easy, but it is always worth it. 
I am so thankful to have a husband that loves Jesus and cares about my relationship with Jesus as well. 
Last night as we were getting ready to go to sleep, I asked that he pray for me to be more passionate about seeking God. It seemed like a simple request, but as I thought about it more this morning...not so simple!
Seeking God is so relative to each person. To one person, it may mean a few minutes spent in the word each day, and to another it may mean an entire day searching the scriptures. 
So what does it really mean to seek God?

As I did my morning devotions, I came across this verse. 
1 Chronicles 28:9
...acknowledge the God of your father, and serve him with whole hearted devotion and with a willing mind, for the Lord searches every heart and understands every motive behind the thoughts. If you seek him, he will be found by you; but if you forsake him, he will reject you forever. 

We are promised that if we seek the Lord, we WILL find him. 
Not maybe.

So I began to ask God to show me how to seek him. What does it mean to serve him with whole hearted devotion?
I then was reminded of  Proverbs 2:3
and if you call out for insight and cry aloud for understanding, and if you look for it as for silver and search for it as for hidden treasure, then you will understand the fear of the Lord and find the knowledge of God. 

There was my answer! 
I have always tried to take the fast lane to seeking God, and not really put in the time and effort that it takes to gain the knowledge of God. 
If I was searching for God as for hidden treasure, He would be consuming my every thought, I would be passionately reading the Bible and spending my time in prayer. 
I pray that this becomes my heart, that I begin to value and search for the knowledge of God as if for hidden treasure. It's a treasure hunt with a promised reward!

Honest Friday Date

Since I can't really drink coffee anymore, I guess I really should consider changing this to a lemonade date, or maybe just water (since I'm supposed to be drinking a ridiculous amount of that). Either way, I look forward to Fridays when I get to sit down with you and just share life.
Real life.
I'm sure that often, bloggers/writers come across as having the perfect lives...after all, we share all the meals we've made this week, the crafts we've done, all the cute pictures we've taken. It seems like the perfect world sometimes!
Well, behind all of the DIY craftiness, home cooked meals, and beautifully photographed moments is a real life. Probably much more similar to yours than you realize!
So that's what I talk about on Fridays. My prayer is that I can be honest with you, not put up fronts, and definitely not try to be someone that I'm not!
Today I want to show you me...

The basics:
I grew up in the great state of Minnesota.
I am a recent college graduate with a bachelor's in English.
I've been married a little over a year to my amazing husband Jimmy.
We both love Jesus and desire to serve Him together.
We live in a little 2 bedroom duplex in southern Indiana in a shady neighborhood (sounds great right;)
We are going to have our first baby in December (read my post about it here)
We have the most amazing church family The Remedy Church.

The realities:
I don't have it all together.
I struggle with insecurities and feeling accepted. 
I'm a people pleaser and I like to make everyone happy. 
I often lose focus on what's really important in life and get caught up in the petty little things. 
I am still figuring out who I am and what God wants me to do with my life...trying to wait patiently!

Patience really seems to be what God has been teaching me this week. You see, I don't have a lot to write about to recap this week because I spent a lot of it in bed sick. 
Morning sickness is kickin' my butt and that is no understatement!
It's not easy for me to put all of my projects aside, and feel unproductive. In fact, it drives me crazy! But God has been teaching me patience through it all and to trust Him and his perfect will and timing in all of it. 
I'm so thankful to everyone who has kept me in their prayers as I am feeling MUCH better today! I hope it stays that way for the weekend!

To end this week's little date, I want to follow in the footsteps of my friend Chrissy at Boerman Ramblings and close in prayer.

Heavenly Father, I thank you that you see us as we are. There is nothing we can hide from you, yet you love us as we are. I pray that instead of putting up fronts to hide ourselves that we will be real with each other and pass your love on to those around us. Please be with my readers today, Father. May you encourage and strengthen those who are feeling weak and down today, and may you show yourself to those who need reminders of you today. Above all, I pray that you will be glorified through our lives. In Jesus name, Amen.

Blueberry Streusel die for

Blueberry Streusel Muffins

Lately I have been trying to come up with some new breakfast foods for my hubby. Actually any breakfast food at all would be fantastic! He usually rushes out the door to work and never has time to sit down to a hot bowl of cereal, or even a pancake breakfast.
Knowing that my hubby is a fan of blueberry muffins, I decided to cook up a batch for easy grabbin' on those rushed mornings!

I found the recipe at The Girl Who Ate Everything and tweaked it from there! They turned out UMMMAZING. They reminded me a little of coffee cake except in convenient muffin form! The Streusel topping added that final touch to make the whole thing melt in your mouth!

So now that I've made your mouth water for some blueberry muffin goodness, here is the recipe I used!


2 cups flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 cup unsalted butter
1 cup sugar
2 large eggs
2 teaspoons vanilla extract
1/2 cup milk
2 cups fresh blueberries 

Streusel Topping:

1/2 cup sugar 
1/3 cup flour
1/8 cup butter, softened
1  teaspoon cinnamon


Preheat oven to 350

Mix together the flour, baking powder, and salt in a small bowl. Set aside.

In a large bowl, beat butter and sugar until light and fluffy. Add eggs, vanilla and milk. Add flour mixture and stir until just combined.

Gently fold in blueberries.

Grease muffin pan or line with paper liners and divide batter evenly among 12 muffin cups.

Mix the streusel ingredients together with a fork until thoroughly combined. Sprinkle evenly over the tops of muffins before baking.

Bake for 20-25 minutes. Let cool before removing from pan

The surprise!

Remember a few weeks back....well more like a month now...when I mentioned a surprise? Well some of you couldn't wait and privately messaged me;)  But for those of you who have been waiting to hear, I have some great news for you! 
Yes, we are going to have a baby!!!

The funny part about all of this is that on April Fools Day I thought it would be a great prank to tell a few people I was pregnant (not knowing that I really was). I found out a few days later...the joke was on me!

It has been so hard for me to keep my own secret from you! Jimmy and I have been so excited!

Part of the reason I have been a little slow with my blogging is because of morning sickness-which by the way I found out does not just happen in the morning!
 Thankfully, my doctor prescribed me some medicine to help keep food in my stomach which is much better!

On our first anniversary we were given the best gift ever. We had our first ultrasound and heard the heartbeat of our baby! I don't think there is any way to explain how that feels. Just knowing that there is life is absolutely amazing! I have been in love with this baby from that moment! 

 As the ultrasound tech explained the development of the baby, I couldn't help but be amazed by God and how he creates and sustains life!
We are blessed that God has trusted us with this little life, and we can't wait to meet him/her:)

Hello Friday!

Hey friends! After over two and a half weeks of being out of town, I am finally home. I love home-there's just something about it that feels right. I don't plan on going anywhere again anytime soon, but I am planning on enjoying summer, how about you? The best part about this summer is I don't have to go back to school once it ends!

I spent last week in good ole' Minnesota vacationing with my family. It was a great time and we had a lot of fun together. We headed up to the boundary waters to tent camp, canoe, and fish. In my opinion, the north shore and boundary waters are one of the most beautiful places to go camping. Check out some of our pictures from the week!

As you can see, it was a packed week full of good times!

Now that I am back, I am really seeking direction from the Lord as to what He wants me to do with my summer. I have a long list of things I would love to do, and jobs I would love to get. It's not easy figuring out this "life after college" stuff! 
As I was working through some of this stuff earlier today, God brought me this verse. 

Isaiah 26:3 "You will keep him in perfect peace whose mind is stayed on you, because he trusts in you."

I also heard this chorus not long after...

Be strong in the Lord and never give up hope.
 You're gonna do great things; I already know. 
God's got his hand on you, so don't life life in fear. 
Forgive and forget, but don't forget why you're here.
Take your time and pray.

Maybe you are in a similar season of life-trying to figure out where you belong, and what your place is. I pray that you too will find encouragement in the Lord as you seek His will for your life! From the Bahamas to Minnesota!

For the past few weeks I have been MIA from the blogging world. I've missed sharing my life with you and reading all of your sweet comments! But I do have a very good excuse for my lack of posts....I was in the Bahamas....and now I am in Minnesota! Yes, two drastically different places;)

We left May 19th for our first Carnival cruise! We were celebrating my college graduation, and our first wedding anniversary! We had a great time together and with our friends Micheal and Kristyn who we went with. Here are a few photos from our trip...
Check out our cruise ship! It was huge! We had a pool, water slide, a few show rooms, a casino, little shops, game rooms, mini golf, and so much more.

The beach where we went snorkeling-we saw a ton of colorful fish and huge sea turtles too!

Overall it ended up being a great vacation and very affordable! We planned all of our own excursions and saved a lot of money that way. I will write more in the future about how all of that worked out. 

But for now, I am at home in Minnesota with my family. We went on vacation together to the boundary waters up north. It was freezing-about 43 degrees the first day. It was quite the temperature change from the 90 degree Bahamas! Well I can't wait to tell you all about it when I get home!
