This is a new recipe I tried last week for my baby brother's 16th birthday party! None of us really like cake...but if you see cheesecake, now that's another story.
Well I still wanted him to have a cake for his birthday so I combined a cheesecake recipe with cake that I found here, and wow was it yummy!
1 cup butter, softened
8 ounces cream cheese, softened
2 1/4 cups sugar
1 tsp. vanilla
2 1/4 cups cake flour
Step 1: In a large mixing bowl, cream the butter, cheese, and sugar for 3 minutes on high speed.
Step 2: Add vanilla then one egg at a time mixing well after each egg.
Step 3: Add flour and mix well.
Step 4: Pour batter into a greased 9x13 inch pan.
Step 5: Bake at 325° for 25 minutes or until a toothpick comes out clean.
Now for the Chocolate Glaze...Mmmmm
1 cup sugar
1/3 cup evaporated milk
1/2 cup butter
1/2 cup semisweet chocolate chips
1 1/2 cups strawberries sliced
1/2 cup sugar
In a medium sauce pan combine sugar and milk and bring to a boil over medium heat. Boil for 3 minutes. Do not stir! After three minutes add chocolate and butter and stir until blended. Pour and spread over cake. Place in freezer for 45 minutes.
This is what the sugar and mild should look like as it boils...
Now for the strawberries, it's easy!
Just take your sliced up strawberries and mix them in a saucepan with the sugar and a few squirts of lemon juice.
heat it up till it thickens and add corn starch if it ends up to watery.
Layer your strawberries on top of the chocolate, refrigerate, and enjoy!
We all sure enjoyed the cake at the party;)
