Healthy Zucchini Muffins (with chocolate chips)

I realize I have been posting a lot of recipes lately! No, The Life Of Faith isn't becoming a baking blog, but I do love sharing yummy recipes with you, and Fall is my favorite time to bake with all of the apples, pumpkins, and of course you can't forget about the zucchini that your mother-in-law keeps trying to get you to take home!

My goal for my blog is for it to be a place that glorifies the Lord, not my own accomplishments. 
John 3:30 "He must become greater, I must become less."

I do believe, however, that God is glorified when we as wives and mothers serve our family, friends, or even neighbors in the way of baking or cooking IF we are doing it in the name of the Lord!

So you think you can't bless someone with that giant zucchini sitting on your counter?
Let's try some healthy zucchini muffins!

Now, I know I don't normally go the healthy route...the more carbs the better it tastes, right? Well this week I had a gestational diabetes scare and it really go me thinking about the way that I eat (and bake). Especially while I am pregnant, I need to be more health conscious! 
So for this recipe, I have used whole grain flour, and substituted apple sauce for the oil.
Did you know you could do that?
Apple sauce instead of oil??
I'm not even going to look into the science of it, but it worked! I hope you will give it a try:)

If your family is hesitant to eat any sort of muffin with a vegetable, add the chocolate chips...they disguise the zucchini well!

Chocolate Chip Zucchini Muffins

1 1/2 cups whole wheat flour
1/2 cup sugar (or a little more if you want it sweeter)
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 egg
1/4 cup milk
1/2 cup apple sauce
1 TBSP lemon juice
1 TSP vanilla
1 cup shredded zucchini
1/4 cup chocolate chips (if desired)
Directions

Mix the dry ingredients together in a large bowl

mix the egg, milk, apple sauce, lemon juice and vanilla together in a smaller bowl

Add the wet ingredients to the dry ingredients in the large bowl and mix together.

Mix in zucchini and chocolate chips

Divide evenly among paper lined or greased muffin cups

 Bake for 20 minutes at 350 or until toothpick inserted in center of muffin comes out clean

Enjoy your healthy scrumptulicious muffins!

27 weeks

Yes, don't panic, I skipped a week!
I was busy, and tired, and well...just never got around to updating you all on sweet baby. 
I will just have to double update this week to make up for it:)

How far along: 27 weeks...the last week of my 2nd trimester is here!

Movement: A LOT of movement still. I am noticing times that she is awake and moving and times when she won't even budge when I poke her. I guess she's got a good sleeping pattern going on!

Weight Gain: 12 pounds so far, but it feels like so much more than that!

Maternity Clothes: I pulled out my sweaters this week and I love it! They are super stretchy, fit over my belly, and cover my unbuttoned jeans! I did make my first trip to Motherhood this week to get some jeans. It was the most I have ever spent on a pair of jeans and they were clearance! I needed them though. Now I can stop complaining about not having any jeans to wear:)

Best moment of my week: It was a pretty busy week last week...I had a garage sale to clean out the spare bedroom to make room for baby sweet pea's stuff! It was fun but a lot of work. I also had a doctors appointment and an ultrasound this week. I got to see how much she has grown! During the ultrasound, she was all stuffed up in my left side with her ankles crossed like a lil' lady:) I couldn't love her more!

Worst moment of my week: Just not feeling well. I have been pretty tired and nauseous off and on lately which isn't fun.


Sleep: I slept for 10 hours straight last Saturday night! You could tell having that garage sale wore me out! I have been sleeping pretty good other than the thunder storms that keep waking me up and occasionally my full bladder!

Miss Anything: I saw someone running outside this week and I thought, hmm won't it be nice when I can just full out run again? I don't really miss it necessarily, but it is something to look forward to!

Cravings: Chocolate, and lately fruit...any kind of fruit!

Aversions: Eggs still repulse me. Eww

Gender: She is still a girl! You can read about our gender reveal party here!

Belly Button: I have an outie!

Labor Signs:  More braxton hicks. My doctor is a little concerned but nothing to get too worried about yet as they are far enough apart. Prayers are appreciated though that they don't progress into anything more until the right time!


Moody or Happy: Stressed and a little tired at the moment.  

Looking Forward: I am looking forward to getting the crib in the spare bedroom and turning it into Sweet Pea's room! Oh, and of course I can't wait to meet my baby girl in about 3 months!!!

Apple Strudel Muffins

I think these muffins were my favorite product of the Apple Challenge (you can read about that here)! They were super yummy and the strudel on top made them almost like dessert. Oh but that didn't stop me from eating them for breakfast:) Hey, they have wheat germ in them to make them healthy!

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 TBSP wheat germ (optional)
  • 1/2 cup butter
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoons vanilla
  • 1 1/2 cups chopped apples (about 3-4 apples)
  •  
  • Strudel
  • 1/3 cup brown sugar
  • 1 tablespoon flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter

Directions:

1. Cut your apples up into small pieces. As small as you can get them without going crazy!
If you have a spiffy apple slicer like mine, use it! It's a HUGE time saver!


2. Mix the dry ingredients together in a small bowl (not pictured because I'm a scatterbrained baker).

3. In a large bowl combine the wet ingredients. 
 4. Mix the apples and dry ingredients into the large bowl and mix well!
 5. Spoon into greased or paper lined muffin pan (excuse my hideous muffin pan. It's why I always use liners)!

6. Mix the Strudel ingredients together until crumbly and then sprinkle evenly over the tops of the muffins.
 Like this!
 Bake at 350 for 20-25 minutes or until knife inserted in the center comes out clean!

 Enjoy your muffins...they are DELICIOUS!

Yarn Wrapped Fall Wreath

Well, there's not much I love more than the change of seasons and an excuse to browse Pinterest for some great wreath ideas:)

This year, I decided to make my first yarn wrapped wreath. My friend Nicole made one too, so we worked on them together to pass the time!
And it does take time!
Sheesh...you've gotta wrap the yarn one strand at a time around that foam!
But it really is one of the easiest wreaths to make. 
All you need is:

-a skein of yarn
-a foam wreath
-2-3 pieces of felt
-fall sprigs
-time

I started it off by just hot gluing the yarn to the back and wrapping it tightly around the wreath. 

 Because you are wrapping in a circle, you will eventually end up with a slanted wrap, but don't panic! Just overlap the yarn to cover the Styrofoam and you can cover it with the beautiful flowers you are going to make:) 
 When you have completely wrapped the wreath,  hot glue the yarn to the back to seal it off!
For the felt flower decoration, I chose a few colors that I thought went with the yarn and found some cute little fall sprigs to go along!
