Basil Balsamic Chicken

I've been on the hunt lately for some healthy recipes. 
When I say healthy, I mean no processed foods, no artificial flavors, preservatives, additives, unhealthy fats...you get the idea.
My hubby and I have been convicted about what we eat. A lot of it is a matter of self-control and not just eating something because we are craving it, or it tastes god, but because it will give our body the nutrients that God designed it to need! 
It's harder than I thought to find good recipes that are healthy AND taste good!

I tried this recipe last night and it was pretty good, so I figured I would share it with all of you. The marinade made the whole house smell yummy:)

Basil Balsamic Chicken

2 chicken breasts
1 TBSP olive oil
1 tsp Balsamic Vinegar
2 cloves of garlic
1/4 cup of basil (fresh is better but I used dried)
1/4 cup of water
onion slices
cherry tomato halves
sliced mushrooms

Combine the oil, vinegar, garlic cloves, basil and water in a blender or magic bullet. Blend until the garlic is basically liquefied. If you have time, marinade the chicken in the combined sauce for a few hours. If not, just place the chicken in a pan and pour the sauce over it. Then place the onions, tomatoes, and mushrooms on top.

Here's what it looks like before you bake it...
Bake the chicken and veggies at 375 for about 40 minutes!

I served it with whole wheat noodles and fresh green beans. Yum!
