Black Bean and Chicken Burritos

Today I'm getting in touch with my Latina side and mixing up some delicious Cilantro-lime Chicken Bean Burritos. Yes, they are as good as they sound! This is my go to meal to take to new mamas. It's healthy, full of protein and easy to make, freeze and reheat!

Ingredients:
8-10 Tortilla Shells (bigger is better)
1 can of black beans
1.5 cups of your favorite salsa
 (I used roasted corn salsa this particular time but any will work!)
2 cups of cooked chicken shredded or diced
1 TBSP lime juice
1/4 cup of water
1 TBSP ground cumin
1 Tsp chili powder
1 cup of cheese (Your preference)

First, mix your black beans and salsa together in a bowl and set aside. Looks delicious already, right?

Next, add the water, lime juice, cumin and chili powder in a sauce pan with the shredded or diced chicken. Heat over medium heat until the mixture is bubbly. 

Now, lay our your tortillas and place a portion of the chicken mixture down the center. Then add in some black bean and salsa mixture followed by a nice handful of cheese. Cheese makes everything yummy!
Your taco shell should be looking something like this right about now...or at least some variation of this!
Now all you need to do is fold your burritos up so that they hold all this deliciousness in. You can either grill them on a counter grill or put them in a frying pan and set a heavier pan on top. Flip over when browned so each side gets nice and toasty!
Serve with a dallop (that's such a fun word!) of sour cream and some sprinkles of cilantro!
 These freeze great and can be reheated as many times as needed! This is the perfect meal to take to a new mama or to freeze for a quick dinner!
